Hey Everyone! Happy Monday!! Feeling back to normal. Which is great for me. Woke up this morning wondering what I would get to make today... I'm thinking either Blue Berry Muffins, or Cinnamon Sugar Pull Apart Bread. The cinnamon sugar mix has got my attention as of right now, but we'll see.
Also, I wanted to formally thank everyone for all the encouragement!! You guys all rock! But just so everyone knows, I'm gonna keep my commenting status as is. K, moving on. So, normally I don't really care for cake mix cookies. I feel like they are too airy, and I like my cookies on the denser side. But these cookies are pretty bomb! The cookie portion is super moist and it melts in your mouth. Then you get the liquid chocolate in the center with the chewy warm caramel. Oh, so good!! And seriously, so easy and quick. No measuring out dry ingredients, and all together all you need is the 4 ingredients. Well, plus the powdered sugar to make them pretty. But really, the easiest cookies to make ever. Enjoy!!

Chocolate Rolo Cookies
2 pkg. Rolo candies
1 box Devils Food Cake mix
2 eggs
1/3 cup vegetable oil
Powdered sugar, for dusting
In a mixing bowl add cake mix.
Oil.
And eggs.
Mix until well incorporated.
Unwrap Rolos.
Take a small amount of cake mixture and make into a flat circular shape. Place Rolo into the center and form dough around the candy. Only use enough dough to cover the Rolo so it can spread through the cookies, about 1 1/2 tablespoons.
Place cookies on either a lined or greased cookie sheet.
Bake at 350 degrees F for 7-8 minutes. Place on a cooling rack and let cool for a couple minutes. Sprinkle with powdered sugar before serving. Yield: 16 cookies.

I think I messed something up somehow - I had the right ingredients but my dough wasn't smooth and workable like yours. Mine was really gooey and hard to form around the candy. Where did I go wrong? They're in the oven now so we'll see if they turn out - I'm going to guess I'm not going to win the office bake off tomorrow but I'm legendary for messing up the simplest of baking recipes. :)
I'm not sure... Maybe you added too much oil? The dough really shouldn't be sticky. Try adding a couple Tablespoons of flour, 1 Tbsp. at a time. That should bring it back together. I wouldn't add more then 3 Tbsp. though. Sorry, I know that's not much help, but unless I'm in your kitchen watching you, it's hard to know what might have happened.
Well, whatever happened didn't hurt it! My cookies weren't pretty, but they were a definite hit at the office and I won 2nd place in the cookie contest. Go figure - thank you for responding. Viva la sticky dough!
It also works great with peanut butter cookie dough and snickers mini bars!! What a great idea to use Rolos. Can't wait to try these out!
My dough was also very sticky, I don't know what it is... I'm gonna chill it for a while and see if that helps. I did these cookies a few weeks ago and didn't have this many issues.
Can you use different cake mix? I don't have a box of devil's food cake but have chocolate fudge!
good to know! i had the exact same problem with the super sticky, gooey dough. they are in the oven now but i was happy to see your post so i know they will still taste good!
i've made these three times....the first two times, the dough was perfect, nice smooth and not sticky. just made them tonight, and it was a nightmare! the dough had the exact consistency of glue. i don't remember the cake mix i used the first two times, but tonight i used duncan hines devil's food...AND, only had jumbo eggs. so, my only conclusion is to NOT use jumbo eggs, and maybe a cake mix other than duncan hines, even though i can't be sure i didn't use duncan hines with the good batches. i'm blaming it on jumbo eggs unless someone has another idea :) no matter what, they taste heavenly!!
